Sesame Honey Chicken

This recipe is suitable for a family of 4, with leftovers for lunch the next day.

 

Sesame Honey Chicken

2 lbs of chicken (either dark or white, or mix them)

2 Tbsp of Sesame Oil

1/2 cup Honey

Sm Can of Tomato Paste

1 Cup of Soy Sauce-Low Sodium (or use Coconut Aminos)

3 cloves of Garlic

1 Tbsp Corn Starch dissolved in 3 Tbsp of water

1 Cup Chicken Broth

1 Cup Broccoli

1/2 cup snap peas

1/2 cup julienne carrots

1 Cup squash/zucchini

 

Stove-Top directions:

In a skillet, heat Sesame Oil over medium heat - add chicken and cook thoroughly. (you will not need to salt and pepper the chicken as the soy sauce/aminos will add enough salt for this dish)

While chicken is cooking, mix the rest of the ingredients (except veggies) in mixing bowl.

When chicken is cooked, move to bowl so you can use the skillet. I cut mine into bite size pieces.

Place veggies in skillet with 1 Tbsp of Sesame Oil and cover - let cook over medium heat for 5 minutes.

Once veggies are softened, add cooked chicken and soy/honey mix and reduce heat to low

Make rice - I make 3 cups in a rice cooker - very quick and easy.

Once rice is finished put on plate and add chicken mixture to the rice.

Dinner is complete.

 

Crock-pot directions:

In Crock-pot put all ingredients (except veggies) - I pre-cut the chicken into bite size pieces.

Mix well and put on low for 6 hours

The last 30 minutes, add veggies and let them simmer with the chicken and liquid mixture.

Prepare Rice as directed (or use a rice cooker)

Once rice is finished, put on plate and add chicken mixture to the rice.

Dinner is complete.
